step 1: Prepare the Peanut Butter Layer
In a medium-sized saucepan, melt the unsalted butter over low heat. Once melted, add the creamy peanut butter and stir until the mixture is smooth and combined.
Stir in the powdered sugar, vanilla extract, and a pinch of salt to enhance the flavor. Remove the pan from heat once all the ingredients are fully incorporated.
In a large mixing bowl, combine the peanut butter mixture with the Rice Krispies cereal. Gently fold the mixture until the cereal is evenly coated with the peanut butter mixture.
Line a muffin tin with paper liners. Spoon about 2 tablespoons of the peanut butter and Rice Krispies mixture into each cup, pressing it down gently to form the base layer.
Step 2: Make the Chocolate Topping
In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil (if using) in 20-30 second intervals, stirring between each until the chocolate is fully melted and smooth.
Once melted, pour about 1 tablespoon of the chocolate over each peanut butter Rice Krispie layer, spreading it evenly with the back of a spoon.
Step 3: Set and Chill
After all the cups are topped with chocolate, place the muffin tin in the refrigerator for about 30 minutes, or until the chocolate is fully set.
Once the cups are firm, remove them from the refrigerator and peel off the paper liners. Your Chocolate Peanut Butter Rice Krispie Cups are ready to serve!
