- Prepare the Cod:
- Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Once the butter has melted, add the seasoned cod fillets. Cook until golden and flaky, about 3-4 minutes per side, depending on thickness. Remove the cod from the skillet and set aside.
- Make the Tomato Sauce:
- In the same skillet, add the halved cherry tomatoes, chopped garlic, red pepper flakes, and the white parts of the green onions. Sauté until the tomatoes are soft and the garlic is fragrant, about 2-3 minutes.
- Deglaze and Simmer:

- Pour in the chicken broth (or your choice of white wine or dashi) to deglaze the pan, scraping up any browned bits from the bottom. Stir in the lemon juice and let the sauce simmer for a few minutes to reduce slightly.
- Finish the Sauce:
- Add the remaining 1 tablespoon of butter to the sauce, stirring until it’s completely melted and the sauce has thickened slightly. Season with salt and pepper to taste.
- Combine and Garnish:
- Return the cod fillets to the skillet, spooning the sauce over them. Let everything warm through for a minute. Just before serving, sprinkle the dish with the chopped parsley, basil, and the green parts of the green onions.
