In another pan, warm a little butter or oil on medium heat. Break the eggs into a bowl, add salt and pepper, and mix them well. Put the eggs in the pan and cook while stirring gently until they are cooked but still soft. This will take around 3-4 minutes.

 

Make sure not to cook the eggs for too long. They should be soft and fluffy to go well with the other textures in the dish.

Put together the breakfast bowls.

Now it’s time for the enjoyable part – putting together the bowls! Separate the crunchy potato bites equally into four bowls. Put some cooked sausage on top of each one, and then add the scrambled eggs. Put the grated cheddar cheese on each bowl while the ingredients are warm, so the cheese can melt a bit.

Lastly, pour the hot sauce generously over each bowl and add chopped green onions for a touch of color and taste.
