Preheat oven to 325°F (163°C). Line a baking pan with parchment paper.
Mix vanilla wafer crumbs with melted butter and press into the bottom of the pan to form a crust. Bake for 10 minutes.
Blend cream cheese, sugar, lemon juice, and vanilla extract until smooth. Add eggs one at a time, blending after each addition.
Pour half of the cream cheese mixture over the crust. Layer with strawberry slices, then cover with the remaining cream cheese mixture.
Bake for 40-45 minutes or until set. Cool completely, then refrigerate for at least 3 hours.
Whip heavy cream with sugar to taste until stiff peaks form. Spread over the chilled cheesecake.
Garnish with whole strawberries and sprinkle with vanilla wafer crumbs before serving.
