6 boneless pork chops (bone-in chops may also be used, adjusting cooking time accordingly)
4 potatoes, peeled and thinly sliced
1/4 cup of milk
1 packet of French onion soup mix
1 can of cream of onion soup
2 tablespoons of olive oil
Salt and black pepper, to taste
Instructions:
Preparation: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Sear the Chops: Season the pork chops with salt and pepper. Heat olive oil in a skillet over medium heat and sear the chops until they’re browned on both sides. Then, remove the chops from the skillet.
Create the Sauce: In a bowl, mix together the cream of onion soup, French onion soup mix, and milk until well combined.
Assemble: Arrange the sliced potatoes in a single layer at the bottom of the prepared baking dish. Place the seared chops on top of the potatoes. Pour the prepared sauce evenly over the pork chops and potatoes.
Bake: Place the dish in the preheated oven and bake for about 60 minutes. If using bone-in pork chops, the cooking time may need to be extended. The dish is ready when the pork chops reach an internal temperature of 145°F (63°C).
Garnish and Serve: Allow the dish to rest for a few minutes after baking. Garnish with fresh parsley, if desired, before serving.
